Salvatore Murana cultivates 15 hectares of vineyards divided into different districts: Gadir, Martingana, Mueggen, Khamma, Praia, Ghirlanda and Coste. Zibibbo grapes come from the vineyards cultivated in Martingana, on terraces overlooking the sea, along the southern coast of the island of Pantelleria. These are old vines raised to the Pantellerian alberello system, producing a few clusters with very intense and concentrated aromas. Harvesting takes place towards the end of August, and the best, healthiest and ripest bunches are placed to dry in the sun for about a month. After a soft pressing, the must is fermented in steel tanks at a controlled temperature of 24-28 °C, together with a portion of must from the pressing of non-dried grapes. The wine matures for 24 months in second-passage barriques.
